The Delta Queen was built with water-tube boilers that were originally intended for a US Navy warship, but never used. They are still there!
Stanleys used (factory at least, others made replacement boilers) a fire tube boiler, basically a steel drum with many, many tubes from end to end in it, and the outside shell wrapped with three courses of piano wire to reinforce the outside of the 'drum.' A steam generator, or flash boiler requires some rather sophisticated boiler water feed and fire control to meet the varying demands of an automobile engine; while the Stanleys had a pretty good "automatic" boiler control, it wasn't sophisticated enough for a flash boiler. The White cars had a fairly complex system, and the Doble was even more so.
The Disney boats run on a rail in a calm body of water, and steam generators serve them fairly well. Walt Disney was a big-time steam fan, so real steam was used on his "stuff" -- but the present corporation may not be oriented in that direction!
