I think I remember reading it was a whole mixed bag of cars from different owners and organizations.

The cars I mainly am looking for are the last 4 cars of the train other than 2955 and 2202

I think there was a complete listing of the consist in the Railfan & Railroad article that covered the New Orleans trip shortly after it ran. I don't have access to my copy now but will try to look it up next week. I believe that the observation was named "Appunky Mountain" or such, whatever the correct spelling is.

Let's see here...pulled these from a kinda grainy video I found so, these may not be all accurate.

-DLMX 10-5 Sleeper 9201 "Clackamas River", ex-SP 9201 "Rincon Hill" (P-S, 1941)
-Baggage Car 262, ex-GN Baggage 262 (GN, 1945)
-Coach 293, ex-SP 2356 (P-S, 1954)
-PAR Coach 2397, ex-SP 2397 (P-S, 1949)
-PNWC Coach 6800 "Red River", ex-GN Parlor-Obs 1147 "Red River" (AC&F, 1950)
-DJMX Coach 5430 "Amber Trail", ex-UP Coach 5430 (P-S, 1950)
-DLMX Articulated Coach 2498A-2498B, ex-SP 2498-2499, nee-T&NO 502-503 (P-S, 1937)
-NRM Coach 2202, ex-SP 2400 (P-S, 1937)
-NRM Parlor-Obs. 2955 "James J. Gilmore", ex-SP 2955 (P-S, 1941)

Just to clarify, the Appekunny Mountain, ex-GN observation car #1290, was used on the World's Fair Daylight in 1984 but not on the 1991 version.

(As of 2018 it was owned by the California Northern railroad.)

I scanned the listing of the 1984 consist and it's attached, albeit in a highly reduced version to be uploaded (If you want a high-quality scan, please PM me. ) Since the cars were arranged with trainlined water lines and propane tanks all on one side, it's likely that the 1991 train was set up similarly.
