There are several former Harvey Houses that are restored or are under restoration along the old Santa Fe line, but I wonder which one is restored and operates most like the famed service of old, with costumed waitresses, etc.? Can anyone elaborate?

The best I've experienced in recent years is the former Fred Harvey lunch counter in the Frisco depot at Hugo, Oklahoma. You could eat a decent meal there and the waitresses wore a Harvey girl uniform.
It's authentic in the sense that Frisco also contracted with the Fred Harvey Company and this particular depot did have Fred Harvey meal service.
I don't even think El Tovar which is still operated by Fred Harvey (Amfac) has the Harvey Girl touch any more.
