If so, it literally took me under a minute to find using only the search term "St Croix Valley passenger car" on duckduckgo.

Built by St. Louis Car as hospital car 89536. Conveyed to Amtrak who rebuilt the car into cafeteria-lounge 3408 in May 1974. Converted to HEP by Amtrak in 1980 and renumbered 3101. Sold in 1995 to GSWR as their 2003. Purchased by Friends of the 261 in 2009 and named "St. Croix Valley" with number 3101 restored. Resold to private owner about 2015.

The attached link has photos taken by Chris Guenzler of a rare mileage trip utilizing the car. Images of the interior of the car are located about half way down the first page. There are four photos of the car starting with an exterior view. The second view is of the interior looking from the cafe-counter area toward the vestibule. The next view is taken looking from the vestibule toward the four, four-place tables adjacent to the cafe-counter and the final interior view is of the service counter.

GSWR removed the "kitchen" area behind the service counter and built a restroom in that area immediately adjacent to the blind end of the car. In the closer view of the service counter to the left hand side, you can see the "self-service", refrigerated, glass window-equipped display cases that held cold sandwiches, bottled water, soda and other items which required refrigeration. FO 261 upgraded the restroom and removed all of the lounge furniture including the small tables interspersed throughout the car. This furniture was replaced with individual lounge chairs positioned on either side of the center aisle. The four, four-place tables were retained.

I have not been in the car since it was sold to the present owner and have no idea what, if any, reconfiguration has been made to the interior since FO 261 sold the car.
