I am restoring a baggage cart from the '30s that has a nice untreated wooden bed. Is there something I can protect it with that will leave the appearance as untreated? What if anything is used on older flat cars? The cart will be placed in a semi-sunny location.

You might want to check your local full service paint store. I am sure there is some kind of treatment that will do what you want. Older rail equipment just had the wood replaced as it was often beat up badly before it rotted.

Linseed oil works pretty good on wood. The local lumber store will have it.
Gerald
Waterproof deck sealant.
Note move it around because it may fade on one side thereby fading unevenly and cracking. Leave spaces between planks.
Note because of there size they tend to get
place under roof overhangs. Thereby rotting faster.
Switch sides.
