controlling (speed of) booster engines on steam locomotives

How were booster engines controlled so that they did not keep working and spinning wheels when the locomotive stalled out, spun wheels, or was going slower than the booster engine was turning? What if the locomotive started going faster? Was there a throw out bearing or anything?

Are there any operating engines with working boosters now?

My understanding is that the 4449 has a functional booster.
