A few random thoughts:

Stainless is a relatively soft metal, and will show scratches especially on flat or plane eflective surfaces. So you need to be more than 'usually' careful on things like Farr grilles unless you then want to have to go through the full polishing regime to get them swirl-free -- that is likely to involve multiple grits on polishing wheels, and correct technique.

I wouldn't use water blasting on stainless if I espected the natural finish to be exposed afterward. I don't see a major reason why 'normal' pressure washing couldn't be used (with a water-based stripper and good PPE, care against rebound, care about where the flushed material goes after the cleaning, etc.)

PLEASE don't use SOS on stainless. It is fine for pots if you don't mind them looking scuffed, but not for anything whose surface finish you value. Either use stainless wool or 'plastic steel wool'. Material from ordinary steel wool gets left in fine scratches on the face of the stainless and will often cause appearance issues, especially if the surface is exposed to the weather.

I don't like the idea of anything containing chlorine being used on stainless, particularly stainless with 'nooks and crannies' or an unexposed back side that the solution could reach. The normal alloys of stainless used in car construction are sensitive to chloride corrosion. Why go there when there are chloride-free formulations that work?

I don't know what railroad car you are working on but I haven't found anything soft about the stainless steel on a Budd built passenger car.

one addition to things mentioned here
You may want to check with your local auto pant supplier and purchase a box of "plastic razor" blades for scraping off stubborn materials off the face of the stainless. They are cheap and do not gouge the metal surface. We do not have any metal scrapers in our detail shop to avoid any accidents.
Many restoration shops use a dual orbital buffer to polish on flat surfaces to avoid burning the metal or any paint.
