Is there a book or website out there with a good history of the company that might include a roster? Perhaps someone at the Railroader's Museum might have some sources considering their exhibit.

The only book I have found is V.S. Roseman's Railway Express Agency, an Overview, soft cover, 128 pages, first printing 1992.

This one is a very good read. Sort of a personal story of the author working for the company.

I'd also have to recommend reading "Ten turtles to Tucumcari". Very interesting book, but doesn't go into information such as rosters, etc.
